Do you have relevant information or experience and wish to present at BakingTECH 2020?  We welcome paper submissions for the 2020 program in the below suggested topics.

 2020 suggested TOPICS include but not limited to:

 Future of the Industry

  • How is the industry projected to change in the next 5, 10, 20 years?
  • Differential access to ingredients and preparation formats which includes restaurants in grocery stores, on-the-go convenience, at-home delivery systems.
  • Artificial Intelligence & Automation (Siri, Cortana, Alexa, Google Assistant, etc).
  • Virtual reality grocery shopping experiences.
  • Robotics and automation in the bakery.

 Food Trends

  • Food trends and how they will affect the future of the baking industry.
  • How can we leverage international trends and concepts?
  • How will breads evolve with low net carbs/sugars & gluten free trends?  How will whole grains, fiber and alternative proteins play a role?
  • Leverage bakery products (Naan, Dumpling Doughs, Slavic Products, Sweet Doughs)

 Future Ingredient Innovations

  • Trends in baked good inclusions.  What's new in fillings (fruit & fat based) and glazes?
  • What trends are we seeing and potential solutions - clean label, sugar free, non-gmo, etc. Dairy vs non-Dairy based?
  • Clean label protection from Mold Spoilage.
  • Future of Enzymes - Using enzymes to increase fermentation time of cultures.  Using enzymes for gut/digestive health as an aid in digestion process.
  • Natural emulsifiers

 Supply Chain

  • Improving supply chain in a "Just in Time" World.
  • What do bakeries need from their suppliers?
  • What do suppliers need from their customers?
  • Understanding the challenges from both perspectives and what challenges arise when there are spikes or lulls in demand.
  • Critical success factors for forecasting....best in the class practices.
  • Trends in material handling.

 Food Safety/Regulatory

  • Regulations that are proposed are beginning to be implemented or will be implemented in the next few years, how can/will the industry adjust to these regulations?

 Packaging Innovations

  • Biodegradable versus recyclable packaging.
  • Reducing waste.

 Sustainable Innovations

  • Feasibility of reclaiming heat from combustible chimney stacks (from ovens) to generate heat for bakeries, hot water, etc.
  • Feasibility of using solar panels to power bakeries.

 Human Resources

  • Sources for virtual, online or on-demand training for employees.
  • Interactive training modules and skills assessment tools.
  • How to reduce recordable injuries and workers compensation.
  • Recruiting and retaining employees.
