I am doing a research project on the North American Gluten Market. I know that the baking industry is responsible for using approximately 80% of the gluten imported/produced in the United States.
I was wondering if anyone out there could provide me with information or guidance related to such items as:
1- Size of baking market in North America
2- Projected/historical growth rate of this industry
3- Key industry players
4- Buying criteria, including such things as Price, Quality, Supply and Contract term and standard delivery time

I would appreciate any information or guidance you can provide me with as I am new to this market.
