I'd like to pretreatment method of fruitchips(papaya) for production of soft fruits cookies.
The condition of target sample
Water content of cookies except fruitchip is 6%.
Water content of fruitchip(papaya) is 12.5%
The content of fruitchip(papaya) in cookies is 14%.
Water content of cookies after baking is 10%.
