I am not sure of the difference in using CalPro instead of Sodium proprionate, but what I do know is that if you go above .5 lbs. CalPro per CWT of flour, you will see size decrease in your proofed product which you can remedy with more fermentation (more proof time, more brew, more yeast, etc.).
