The Bakers yeast (Saccharomyces cerevisiae) contains a natural plant sterol ergosterol (provitamin D). Bakers yeast typically contains 0.5 percent (w/w) ergosterol, but selected strains can contain up to 1.5 percent ergosterol. When exposed to ultraviolet B Lallemand Vita D yeast is naturally rich in vitamin D and has the same leavening capacity than regular bakers yeast. It can be used by bakers to leaven their dough and strengthen their bread's nutritional and healthy attributes.
