Global Ingredient Trends - What's Hot and What's Not

How many bakers remember the most popular ingredient claims from the past decades;  NO TROPICAL OILS,  CONTAINS OAT FIBER,  FAT FREE,  MADE WITH HIGH FRUCTOSE CORN SYRUP.  Does anyone remember the miracle ingredient; OLEASTRA?

So what claims are we making today;  GLUTEN FREE, ORGANIC, PRESERVATIVE FREE, CONTAINS ANCIENT GRAINS and my favorite, GMO FREE.  Will anyone remember STEVIA in 15 years?

The goal of my presentation is to look at the ingredient claims being made around the World.  Let’s see what’s driving increased sales and what’s just wasting ink.  Many successful trends in the US begin in other countries.  Let’s take a look at what’s working and what’s not and try to pick out the winners for the next year, 5 years or decade.

Do the claims we make on our labels really have an impact on sales.  You bet they do.  In fact, sometimes the impact can be bad, but we are all hoping it to be the opposite.  Let’s see what trends to follow and from which ones we should run.
