Charles Lubin

Baking Hall of Fame 2006 Inductee


Founder of Kitchens of Sara Lee.  In 1949, Charles Lubin succeeded in creating a commercially produced cream cheesecake and named it after his eight year old daughter who evenutally became the company's namesake.  Two years later Lubin introduced an all-butter pound cake and coffee cake.  By 1953 he perfected frozen product formulation and began the first national expansion program of a frozen sweet goods baked product.  Within 10 years, the Kitchens of Sara Lee established operations in Canada and by 1972 manufacturing had begun in Australia.  Lubin's ability to mechanically produce laminated sweet dough products and incorporate baking in foil pans revolutionized the consumption of sweet goods.
